  • Welcome to Episode 8 of Motherhood Around the World, a podcast that celebrates mums everywhere and dives into the nuance of parenting in different countries.

    This week I spoke with Claudia, who lives in Guatemala with her husband and 3 girls. While chatting she had the excellent idea to share one of her favourite recipes, and I hope to continue to include that in future interviews.

    Claudia’s Mango Pico de Gallo

    * 2 mangos

    * 2-3 tomatoes (Feel free to use more/less if you love tomatoes)

    * Lemon juice

    * Cilantro (better if you use fresh)

    * 1 onion (I use a purple one for a subtler taste)

    * Salt and pepper to taste

    * Chop the mangos, tomatoes, onions and cilantro. Mix together and add the lemon juice, salt and pepper. Better if chilled before serving. You can serve it with tortilla chips and on top of a lettuce salad.

    This week I spoke with Lucy, a self declared “3rd culture kid”. Her grandparents moved from China to Indonesia and her family then moved to Australia when she was a teenager, where she now lives in Sydney with her husband and daughter. She’s a talented photographer, writes a blog called Who Does the Dishes, recently wrote her first book Food Wise: A kid's guide to fighting food waste and saving the planet, contributes her sustainable recipes to The Chefs Manifesto - a UN SDG2 advocacy group, and is involved in climate action with Parents for Climate.
