3) The AP price of a pork chop with bones and excess fat removed is $3.54 per pound and the EP yield percentage is 78%. What is the EP price for 1 pound of cooked, pork chop?
4) A facility operates at a 35% food cost. The raw food cost of the bulkie rolls is $2.15. What is the pricing factor that would be used to calculate the selling price of the roll?
5) A catering event requires 14 employees to work for 8 hours each. All employees are paid $10/hr, expect for 2 managers who make $25/hr. The total event cost $14,000 and rent for the venue was $5000. Of the total production cost, what percent was spent on labor?

Alessandra is a dietitian at Boston University where she provides 1:1 nutrition counseling to students, teaches a cooking class, and works closely with BU Dining to ensure ingredient transparency across dining halls. Alessandra started her career at DJF Nutrition as an intern and became Dana’s first employee in 2022. Since then, Alessandra has worked closely with Dana to develop DJF Nutrition's social media and brand. Outside of her professional roles, Alessandra channels her creativity through cooking, art, and graphic design.

Emily Bugay, MS, RD, LD is the Director of Clinical Nutrition and the Dietetic Internship program at University of Kentucky HealthCare. She obtained her Bachelor of Science in Dietetics from Michigan State University, completed her Dietetic Internship at UK HealthCare, and her Master’s degree in Health Science with an emphasis in health care management from Northern Kentucky University. Prior to her current role, she worked at UK HealthCare as a Clinical Dietitian in both Cardiology and Heart and Lung Transplant positions. She received the Emerging Dietetic Leader award from the Bluegrass Academy of Nutrition and Dietetics in 2023 and has been a guest speaker for dietetic associations, college courses, and symposiums on topics including Transplant Nutrition, cardiac diets for patients with diabetes, and navigating the dietetics profession. She is an active member of the Academy, the Kentucky state affiliate, and the regional affiliate. Emily is passionate about leadership and mentorship, preparing the next generation of dietitians, and fair compensation for nutrition professionals. -

Krista Kolodziejzyk is a Registered Dietitian and the founder of Dietitian Success Center (also called DSC). DSC is a platform designed to help dietitians deliver exceptional nutrition care while saving at least 1 hour per day in client prep time. They do this by providing RD’s with an all-access-pass to client handouts, evidence summaries, reference guides and video courses. All content is designed specifically for Registered Dietitians.Krista is on a mission to redefine the landscape for RD’s, pushing boundaries in training and practice. She has an MBA in Sustainable Commerce & an MPH in Community Nutrition. She is also working towards her Level 1 Coaching Certification through the International Coaching Federation.

Lacie's passion shines through her dedication to mentoring students. She goes above and beyond, guiding them to discover their true career aspirations and crafting personalized education plans tailored to their unique interests, lifestyles, and abilities. Specializing in distance education, Lacie thrives on the diverse perspectives her students bring to the program and the profession as a whole. She completed her Master’s degree and PhD in Nutrition and Integrative Physiology at the University of Utah. She believes that service to others in the dietetics profession is one of the best things she can do to stay actively engaged in all areas of nutrition and dietetics.
