This week Tom & Will sit down with energy-filled Chad Wiltz from Florida's own Garagiste Meadery. We chat about sourwood honey, barrel ageing, carrot cake flavour profiles, cream cheese powder, and a laugh or two.
As always we chat about choose honey and making traditionals, choosing yeast, and discuss how different mead makers approach their traditionals and why.
We really enjoyed this week's chat with Chad even if there were a few technical issues, and we apologise for the stilted conversation as the delay sometimes means we talk over each other and the politeness of mead makers means we both prefer to listen.

The mead podcast is back, we thank you all for your continued support, ideas, and encouragement over the past few years. And we have listened. This episode, and indeed the entire season is dedicated to meeting mead makers & mead enthusiasts.
Nika is not only a genuine mead enthusiast but an amazingly positive voice in the mead world. We sat down to talk about her family business (The Mead) also how the food industry approaches mead with traditional and non-traditonal food pairing, cocktails, and much more.
