    Special guest Scotty Reiss from A Girl's Guide to Cars joins the Carpool for industry news. She's been in the automotive world since 2013 bringing content by women for women to help them become smarter and happier car owners. And while the industry has been changing from the inside, the retail side is still slow to catch up. The New York Auto Show has been changing that and on Saturday, March 30th from 7 pm to 9 pm (or whenever the party fizzles) Scotty will be offering a behind the scenes VIP tour experience for women. 

    Scotty also brings today's ditch the drive-through: a delicious pasta dish that comes together in a snap. Set your oven to 425 and in an oven-safe dish layer spinach (fresh or frozen), tomatoes (small or quartered), garlic cloves (one per person), and ricotta cheese (¼ cup per person). Drizzle the whole thing with olive oil, put a lid on the dish, and bake for 30 to 40 minutes. Boil your pasta while it bakes. When the veggie mixture is done, smash the tomatoes and garlic and toss your pasta in. Serve with crusty bread.

GM received $26 million in federal funding for hydrogen fuel cell medium duty trucks.     Ashley writes in today's ditch the drive-through recipe, Caprice Chicken. If you're not in first trimester survival mode, this recipe is for you. First, gather your ingredients: thin sliced chicken breasts, cherry tomatoes, mozzarella, basal glaze, fresh basil. Cook the chicken on the stove top in a pan with some olive oil or avocado oil, salt pepper, Italian seasoning, whatever sounds good. Once about halfway through, flip the chicken and throw in some grape or cherry tomatoes. Keep them in long enough for them to start blistering. Once chicken is nearly cooked, cover with slices of mozzarella, so it starts to melt onto the chicken. Once finished, drizzle the balsamic glaze on top and garnish with fresh basil. Serve with a veggie or bagged salad and rice, pasta, or potatoes.

    In industry news, Volkswagen is coming out with a new line of EVs under the brand name Scout Motors. Rivian is teasing the new R2 that could have a starting price as low as $40K. The IHS launches full-size SUV crash testing as well as booster seat ratings.

    Ditch the drive-through with bang-bang chicken skewers. Put two chicken breasts chopped into bite-sized pieces in a bowl, and toss with a half teaspoon of garlic powder, onion powder, paprika, salt pepper, and a little olive oil. Brush it over the cooked chicken.

    Ditch the drive-through steak bites for Febru-air-y comes from Stacy. Chop your steak in bite-sized pieces. Put them in a bowl with two tablespoons of oil, salt and pepper. Air fry 400 for four to six minutes.While they cook, heat up butter on the stove and add garlic. Add the cooked steak to the butter, top with parsley, and serve with a salad or your favorite Pillsbury Crescent rolls to have dinner on the table in 15 to 20 minutes. 

    And a bonus recipe, Ashley's Cowboy Cornbread Casserole, gets another mention: Brown your ground beef in a cast iron skillet (it must be a cast iron), add a can of Rotel, a can of corn, drained red kidney beans, and mix then pat down. Make cornbread according to the box directions then drop the mix all over the bean mixture. It doesn't have to be pretty! Bake according to the cornbread directions.

One bag of cubed, roasted potatoes, one pound of sliced sausage, one can of cream of chicken soup, one can of cream of potato soup, three cups of chicken broth, eight ounces of cheddar cheese, half a stick of butter, a third of a block of cream cheese, and season with barbeque rub and a bit of garlic powder and salt. Add ingredients to your Crock Pot (cook on high for 3-4, low for 6-8 hours) or Instant Pot (10 minutes on high). Garnish with bacon bits or scallions if desired.

The gals propose we normalize giving one star reviews and discuss how they rate their media. 

    Ditch the drive-through brings you three delicious ways to get out of your kitchen rut with a salad, a casserole, and a side dish suggestion. For a tasty Tuna pasta salad from Stephanie combine one can of tuna, chopped celery, and chopped pickles. Add Kelly's ranch dressing minus the ranch part (mayo, sour cream and Greek yogurt), salt pepper, dill weed, and garlic powder. Mix and serve!

    To make Maria's not-a-tot casserole you'll need one packet of bacon, a frozen bag of tater tots, ranch dressing mix, shredded cheese, eight eggs, and two cups of milk. Cook and crumble the bacon, combine with the cheese and tater tots and pour into a greased 9 x 13 baking dish. In another bowl, mix the eggs, ranch packet, and milk. Pour over the tater tot mixture. Bake at 350 for 50 to 60 minutes.
