    INGREDIENTS
    Yield:6 to 8 servings

    8 tablespoons unsalted butter, cut into cubes2 medium shallots, peeled and finely chopped1 pint fresh chicken livers, approximately 1 pound, trimmed1 tablespoon fresh thyme leaves, chopped⅓c up Madeira or port wine3 Tbsp heavy cream, plus more as neededKosher salt to taste

    PREPARATION

    In a large, heavy sauté pan over medium heat, melt 4 tablespoons of the butter until it begins to foam.Add the shallots, and sauté them until translucent, but do not allow to brown.Add the livers, thyme and Madeira or port, and increase to high heat.Cook, occasionally stirring until the wine has reduced and the livers are lightly browned but still very soft and pink on the inside, approximately 5 minutes.Remove the pan from the stove, and put its contents into a blender or food processor, along with the cream and the remaining butter.Purée until smooth, adding a little more cream if necessary.Taste and adjust seasoning, adding salt if necessary.Transfer pâté into a glass jar or bowl, then smooth the top..Cover with plastic wrap and refrigerate until firm, about two hours or up to five days.Serve toast points or crackers.

    INGREDIENTS:
    • ½ cup olive oil
    • 2-3 cloves garlic, minced
    • 12 pieces andouille sausage (cooked and chopped
    • 1-2 cups chopped fresh tomatoes
    • 2 dozen mussels
    • 2-4 tablespoons fresh parsley
    • ½-1 quart clam juice
    • Corn Stock (water from cooking corn)
    • 1 ear corn, cut in thirds
    • 1 cup corn shucked
    • 2 tablespoons butter
    • 2 tablespoons heavy cream
    • 2-4 tablespoons cilantro
    • Pinch cumin
    • ½ cup lime juice
    • Fresh cilantro for garnish

    PREPARATION:
    In Dutch Oven or other large pan, heat oil and slightly brown the garlic. Add
    andouille sausage and tomatoes, cook for 1-2 minutes letting all the flavors melt
    together. Add washed mussels and fresh parsley and cook for another 1-2
    minutes. Add clam juice, both shucked and raw whole corn, a ladle of corn stock,
    butter and cream. Cover and simmer until the mussels have opened. Stir in
    cilantro, cumin and lime juice.

    The Idaho staple dessert consists of vanilla ice cream dusted in cocoa and topped with whipped cream and chocolate shavings.

    Ingredients

    · 1 quart Vanilla ice cream

    · 1 cup cocoa powder, for dusting

    · 1 cup Chocolate Syrup

    · 2 cups whipped cream

    · 1/2 cup cookie crumbs and ½ cup diced nut topping mixed together


    Directions


    · Place cocoa in a mixing bowl.

    · To form the “Potato” split ice cream into 4 equal rectangle logs.

    · Mold, with your hands, into shape of baked potato.

    · Place the “potatoes” in the cocoa powder and coat evenly.

    · Place in freezer until firm, about 1 hour.

    · To assemble the potato, spoon a ¼ cup chocolate syrup on the bottom of a dessert plate.

    · Split frozen "potato" down the middle and place a dollop of the whipped cream in center.

    · Sprinkle with the cookie crumbs and mixed nuts.

    Ingredients

    6 large eggs1/3 cup heavy whipping cream1/2 tsp salt, adjust to taste1 cup grated mozzarella cheese1/2 cup goat cheese1/2 cup cherry tomatoes1/2 cup bell pepper, red, orange or yellow1 cup arugula1 tbsp unsalted butter1 tsp fresh herbs, for garnish

    Instructions

    Preheat the oven to 400F. Whisk eggs, heavy cream and salt until you get a smooth and even texture. Set aside.Cut tomatoes in half. Chop bell peppers into small pieces.Melt butter and coat the sides of the baking dish with it. Spread vegetables evenly on the bottom of the pan.Pour over the egg mixture. Sprinkle the cheese on top. Using a fork, distribute the cheese around a little to incorporate it into the eggs. Bake for 15 to 17 minutes, or until the edges are set and the top is lightly browned.

    "Round Swamp Chicken Salad - preferably without any chewy rubbery bits..."

    Ingredients

    1 bone-in, skin-on chicken breast (about 1 pound)1 teaspoon olive oil1 ½ teaspoon rotisserie spice blend2 medium stalks celery, cut into ¼-inch dice1/3 cup vegenaise

    FOR THE ROTISSERIE SPICE BLEND:

    2 teaspoons paprika2 teaspoons garlic powder2 teaspoons onion powder1 teaspoon kosher salt2 teaspoons chili powder


    Instructions

    1. Preheat the oven to 325°F.

    2. Place the chicken breast on an aluminum foil-lined baking sheet and rub all over with the olive oil and the spice blend.

    3. Place in the oven for 1 hour 30 minutes then remove and cool to room temperature.

    4. Remove the skin and bones and shred the chicken into large pieces.

    5. Place the shredded chicken in the bowl of a food processor and pulse 7 times for 1 second each time. Add the diced celery and pulse 5 more times.

    6. Transfer the mixture to a bowl and stir in vegenaise and season with salt and pepper to taste.

    INGREDIENTS:

    CAKE:
    3 medium apples
    1/2 medium lemon- zested and juiced- (store separately
    1/2 cup plus 2 tablespoons granulated sugar
    9 tablespoons plus 1 teaspoon unsalted butter, at room temperature
    1/2 teaspoon vanilla extract
    3 large eggs
    1 1/2 cups all-purpose flour
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 to 2 tablespoons demerara (raw) sugar

    WHIPPED CREAM:
    2 cups cold heavy cream
    4 teaspoons granulated sugar
    1 1/2 teaspoons vanilla extract

    INSTRUCTIONS:
    1. Pre-heat the oven to 350°F. Line the bottom of a 9-inch springform pan with parchment
    paper; set aside.
    2. Peel, core, and quarter the apples.
    3. Thinly slice each quarter lengthwise without cutting all the way through to the core side,
    leaving the quarter hinged together like a fan.
    4. To the bowl of a stand mixer add lemon zest, sugar and butter.
    5. Beat on medium speed until light and fluffy. Stop the mixer and scrape down the sides of
    the bowl with a rubber spatula.
    6. Add the vanilla and 1 of the eggs. Beat until combined before adding the second egg.
    Beat until combined and then add the third egg. Scrape down the sides of the bowl again
    and beat until combined.
    7. Whisk together the flour, baking powder, and salt together in a medium bowl.
    8. With the mixer on low speed, beat in the flour mixture until just combined, and beat in
    the reserved lemon juice. Scrape down the sides with a spatula and give the batter one
    last mix by hand.
    9. Scrape the batter into the prepared pan and smooth the top. Gently press the apple
    quarters into the batter, core-side down, leaving only a small space between each quarter.
    10. If you have any apple left over, separate the slices and insert them into any open space
    available.
    11. Sprinkle the top evenly with the demerara sugar.

    12. Bake for 20 minutes. Rotate the pan and continue baking until the cake is golden-brown
    and a tester inserted into the cake (not apple) comes out clean, 15 to 20 minutes more.
    13. Place the pan on a wire rack to cool for 5 minutes. Run a thin knife around the edge of
    the cake and removing the springform ring. Let cool to room temperature.
    14. When ready to serve, make the whipped cream: place all the ingredients in the bowl of a
    stand mixer fitted with the whisk attachment. Beat on medium-high speed until stiff
    peaks form. Serve the cake at room temperature with whipped cream.

    Royal Caribbean Kahlua Crème Brûlée

    Serves 6
    INGREDIENTS:
    Crème Brûlée
     2 cups heavy cream
     4 egg yolks
     1/2 cup sugar
     1 shot Kahlua
    Garnish
     Brown sugar
     Fresh berries
     Mint leaves

    INSTRUCTIONS:
    1. Preheat oven to 350°F.
    2. In a saucepan over medium heat, slowly bring cream to a boil.
    3. In a mixing bowl. combine egg yolks and sugar and beat until mixture is lemon colored.
    Transfer contents of mixing bowl to top of double boiler (bottom of boiler should contain
    simmering water). With double boiler over heat- beat until mixture has doubled in
    volume, about 10 minutes.
    4. Remove from heat and keep whisking to cool it down.
    5. Slowly stir hot cream and Kahlua into egg mixture. Using a fine sieve, strain into a bowl
    set over ice to quickly chill the mixture.
    6. Pour mixture into individual molds set in a shallow pan or baking dish. Pour water into
    the pan until it is halfway up the sides of the molds and bake for 40 minutes.
    7. Evenly sprinkle top with brown sugar and place under broiler or use a pastry blow torch
    to heat sugar until it turns brown and bubbles.
    8. Garnish with berries and mint.
    9. Eat.
    10. Don’t fall overboard.

    INGREDIENTS:
    1 chicken, 3 pounds
    2 TBS flour
    salt
    pepper
    clarified butter for sautéing
    3 shallots
    1/2 cup dry white wine
    1/2 cup chicken stock
    1 bay leaf
    1 pinch thyme
    2 stems parsley
    1 small bunch fresh tarragon

    DIRECTIONS:
    Cut chicken into 8 or 10 pieces or leave whole. Combine flour, salt, and pepper. Coat
    chicken with flour mixture. Brown on all sides in hot clarified butter. Cut shallots very
    fine and spread over chicken. Simmer for a few minutes. Add wine, stock, and the
    bouquets of herbs using the stem only of tarragon, saving leaves. Cover and simmer cut
    up chicken 25 minutes or until tender. Simmer the whole chicken 45 minutes, turning
    frequently. When chicken is tender, remove and keep hot.

    SAUCE:
    1 cup light cream
    1/4 cup grated Parmesan cheese
    To the pan juices, add cream and cheese, and any flour not used in coating chicken.
    Simmer gently until sauce thickens. Strain sauce over chicken. Garnish with tarragon
    leaves, whole or chopped.

    Tennessee Hot Chicken

    Ingredients:

    · 2 3½–4-lb. chickens, each cut into 10 pieces (breasts halved)

    · 1 tablespoon freshly ground black pepper

    · 2 tablespoons plus 4 tsp. kosher salt

    · 4 large eggs

    · 2 cups buttermilk or whole milk

    · 2 tablespoons vinegar-based hot sauce (such as Tabasco or Texas Pete)

    · 4 cups all-purpose flour

    · Vegetable oil (for frying; about 10 cups)

    · 6 tablespoons cayenne pepper

    · 2 tablespoons dark brown sugar

    · 1 teaspoon chili powder

    · 2 teaspoon garlic powder

    · 2 teaspoon paprika

    Instructions:

    · Toss chicken with black pepper and 2 Tbsp. salt in a large bowl. Cover and chill at least 3 hours.

    · Whisk eggs, buttermilk, and hot sauce in a large bowl. Whisk flour and remaining 4 tsp. salt in another large bowl.

    · In deep fryer or heavy bottom pot with Frying Thermometer:

    · Fill oil to measure 2 inches. Heat over medium-high heat until thermometer registers 325°. Pat chicken dry. Working with 1 piece at a time, dredge in flour mixture, shaking off excess, then dip in buttermilk mixture, letting excess drip back into bowl. Dredge again in flour mixture and place on a baking sheet.

    · Working in 4 batches and returning oil to 325° between batches, fry chicken, turning occasionally, until skin is deep golden brown and crisp and an instant-read thermometer inserted into thickest part of pieces registers 160° for white meat and 165° for dark, 15–18 minutes.

    · Transfer to a clean wire rack set inside a baking sheet. Let oil cool slightly.

    THEN:

    Whisk cayenne, brown sugar, chili powder, garlic powder, and paprika in a medium bowl; carefully whisk in 1 cup frying oil. Brush fried chicken with spicy oil. Serve with bread and sliced pickles.

    But don’t eat any. Gwen wouldn’t allow it.

    Note: Chicken can be seasoned 1 day ahead. Keep chilled.

    DREW's PENNE!

    2 Tbsp extra virgin olive oil1 (28 oz) can crushed tomatoes1/2 cup minced shallot1/2 cup of diced pancetta6 cloves of minced garlicSalt and freshly ground black pepper to taste1/2 cup vodka (the good kind - don't go cheap here)1/4 tsp red pepper flakes, more or less to taste1 cup heavy cream1/2 cup finely shredded parmesan cheese, plus more for serving1/4 cup chopped fresh basil1 box of penne pasta (save some pasta water from boiling to thin out the sauce if needed)

    Instructions

    Boil pasta per the instructions on the box minus a minute or two (keep pasta slightly firm). Season water with salt. Reserve 1/2 cup pasta water and drain pasta.Heat olive oil in a large pot over medium heat. Add shallots and pancetta and saute for 5 minutes, add garlic and red pepper flakes and saute 1 minute longer.Remove pan from heat and add tomatoes, vodka, season with salt and pepper. Return to medium-high heat, bring to a simmer then reduce heat to medium-low and let simmer until strong alcohol scent has cooked off, about 15 min, stirring occasionally.Stir cream in and let just heat through, about 1 minute. Stir in parmesan and basil.Add drained pasta to pot with sauce, toss to coat, while thinning sauce with a little pasta water as needed. Serve with more parmesan

    Kristin’s Vodka Sauce

    ½ cup pancetta (medium dice)½ cup chopped onion or shallots (small dice)2 cloves minced fresh garlic1 tsp crushed red pepper (or to your preferred level of spice)½ cup Vodka1 28oz can whole, peeled plum tomato 2/3 cup of Heavy Cream (at room temperature or slightly warmed) Freshly grated parmesan cheeseCooked Pasta of choice (penne, rigatoni, cascatelli)In large pan, heat to medium-high and add the pancetta. Cook until browned but not burned. Add the chopped onion / shallot and cook until translucent. Add chopped garlic and crushed red pepper and cook for 1 minute – do not burn. Add Vodka to the pan and allow to cook briefly. Open plum tomato can and add to the pan. Allow to cook and then break up the whole tomato with the side of a spoon. You want it to be chunky. Bring sauce to a simmer and cook for 15-20 minutes. Add warm cream to the pan and cook until heated through – approx. 5 min. Add Sauce to your cooked pasta and top with Parmesan. Enjoy!

    Above-Suspicion Tilapia Fish Dinner

    Ingredients

    Tilapia:

    4 tilapia fish fillets

    2 cloves garlic minced

    1 lime juiced

    2 tablespoons Mexican chilli spice

    1/4 teaspoon salt

    1 tablespoon olive oil

    Bean Mixture

    1 cup drained canned black beans

    1/2 cup your favorite salsa

    1/4 teaspoon salt

    Assemble

    2 cups cooked couscous

    1/3 cup (or to taste) your favorite salsa

    1/3 cup Guacamole

    sour cream (optional)

    grape tomatoes (optional)

    sliced jalapeños (optional)

    Instructions

    1. Toss the fish fillets with all ingredients except for the olive oil. Rub the spice, garlic and lime well into each fillet. Let sit for 15 min.

    2. Heat skillet over medium-high heat with the olive oil, and when hot, add the tilapia fish. Let the fish sear on one side for 6 mins, flip the fillets and let them cook for another 5-6 mins.

    3. In the meantime, prepare the bean mixture. Mash up the black beans roughly using a fork in a bowl, season them with salt, and toss them with the salsa mixture while gently mashing to your desired texture.

    Plating

    Spoon cous cous onto plate, top with bean mixture and additional salsa, tomato and jalapeno. Place the fish fillet to side of cous cous and then surround it with some salsa, guacamole and sour crème if desired.

    Deep-Fried Testicles AKA Rocky Mountain Oysters:

    Ingredients

    1 pair lamb's testicles (calf, sheep or turkey nards can be used as well) with muscle removed

    2 tablespoons of salt

    1 tablespoon of vinegar

    1 cup panko crumbs (season with salt and pepper)

    1 large egg, lightly beaten

    1 teaspoon Dijon mustard

    Salt and pepper to taste You taste them. No, YOU taste them. LOL

    Lemon juice and chopped parsley to garnish

    1 quart oil, for frying

    Directions

    1. Soak testicles in a plan of salted water for 1 hour, then drain.

    2. Transfer to large pot and add enough water so testicles float. Add vinegar to pot. Parboil, drain and rinse.

    Cut the testicles into ¼ inch to 1/3 inch slices, remove the membrane from each slice after it's cut. Set aside.

    Combine the egg with the mustard in a small bowl. Have the panko crumbs ready for dipping on the side.Heat the oil in a wok to 350°F.Dry testicles with paper towel. Dip each slice of testicles in the egg, then dip into the (seasoned) panko crumbs. Slip into the oil and fry from 1 to 2 minutes, until golden brown. Remove from the oil and place on a rack. Serve immediately, with lemon to garnish.To Pan Fry: For pan-fried testicles, place a heavy skillet over medium-high heat. Add approximately 3 tablespoons of oil to the pan. Coat the testicles in the egg and crumb coating and place into the pan. Pan-fry on one side for 2 minutes, taking care not to touch the disturb the coating on the testicle. Flip and pan-fry on the other side for 2 minutes. Serve immediately, garnish with lemon. Serve with cocktail sauce or horseradish cream if desired.

    Perry’s Pork Chop Copycat Recipe

    Purchase from butcher pork chop with 3 rib bones in per piece.

    Brine the Pork

    Ingredients:

    3 cups water

    1 cup Honey

    ½ cup Brown Sugar

    1 Onion, sliced

    4 cloves Garlic, crushed

    2 Tbsp Black Peppercorns

    1 Tbsp salt

    Combine ingredients in a saucepan. Bring to a boil then remove from heat. Allow to cool. Place with pork in a large container, all the meat should be covered. Brine 1 to 4 days in the refrigerator, covered.

    Rub:

    4 Tbsp Salt

    2 Tbsp Black Pepper

    2 Tbsp Ground Thyme

    3 Tbsp Dark Brown Sugar

    2 Tbsp Onion Powder

    1 Tbsp Cayenne Pepper

    Combine all. Apply rub to pork and allow to sit in the refrigerator 2-4 hours.

    Barbeque- Slow Cook:

    Slow cook with charcoal between 200 and 225 degrees.

    Smoke with apple wood chips. (We had read to use any fruit wood chip.)

    Barbeque until reaches internal temperature of 160 degrees.

    Although cooking times vary, ours took almost four hours.

    Sous vide @ 140 degrees for 2-4 hours and finish on Gas Grill will work too.


    Top with Garlic Herb Butter:

    Combine 1 stick of salted butter (softened) with 2 cloves minced garlic and 1 Tbsp minced parsley.

    Serve:
    Serve by cutting the ribs off the chop. Serve with your favorite sides- mashed potato and baked apples

    Directions:

    Start with a dozen or so Cherry tomatoes and drizzle with olive oil and S&P - Roast at 375 for 20 minutes until they start to split.

    For the Sauce:
    I used British back bacon- but you can use pancetta, maybe 2 thick slices, chopped.
    2 cloves of garlic
    2 shallots chopped
    1-1/2 cup cream
    1/4 cup of grated parm,
    peas
    chopped baby spinach
    Roasted tomato

    Add pancetta to a hot pan, cook until semi-crispy, add the garlic and shallots and sauté until translucent.

    Add the cream and bring to a boil, then reduce to a simmer, add in the parm and spinach, let cook at a gentle simmer. Salt and pepper to taste. Add peas toward the end - you want them to still be bright green when you serve.

    Cook some fresh pasta until slightly less than al dente - I used tagliatelle, but linguine would work- whatever you have is fine.

    For the Scallops:
    10 large sea scallops. Dry them on a plate between paper towels for like… 6 hours. You want them DRY.

    In a cast iron pan or some other non- Teflon pan, with heat on high add a thin layer of grape seed oil or other non-flavored oil. Get it REALLY hot. Salt and pepper scallops and place them evenly spaced in screaming hot pan. Then chill out. Don’t touch those scallops as much as you WANT to- DON’T DO IT.

    Cook 3-4 minutes. At 3 minutes you can gently try to move the first scallop you put in the pan with tongs. If it is sticking at all…leave it for another minute and try again. They will release from the pan when they are good and ready and not before.

    Turn scallops over and repeat the process in the other side. Check at 3 minutes. You want a GOOD dark sear. Remove from pan and set aside.

    Once your sauce is combined, add your cooked pasta to the pan of sauce. Coat pasta with sauce and serve into a bowl- top with the seared scallops…

    Strap bowl to face and enjoy.

    Directions:

    3 calamari steaks, but into 3/4” strips

    Tempura Batter:

    1 cup A/P flour

    1 large egg

    1 cup ice water (do not get ice into batter)

    Combine batter ingredients and whisk until smooth. Preheat Deep fryer to: 400. Dip calamari strips into the batter, shake of the excess.

    Using a deep fryer, fry calamari steaks for 3 minutes or until crispy.

    Topping:

    6 Slices bacon, cooked and chopped

    Fresh corn cut from the cob

    3 scallions chopped

    1 cup cherry tomato chopped

    Sautée: corn, scallion, and cherry tomato until heated through, salt and pepper to taste

    Cheaters Lemon Aioli:

    3 medium cloves Garlic, minced

    1 Tbsp lemon zest

    2 tsp Lemon juice

    1/2 cup Mayonnaise, good quality

    1 Pinch Salt

    Combine above and let sit for 30 minutes.

    Once calamari is fried, spoon aioli into the bottom of your serving dish. Place calamari strips on top of aioli. Spoon bacon, tomato corn mixture over the top. Enjoy!

    Ingredients:

    2 cups (12 ounces) milk chocolate candy coating, or chopped milk chocolate1 cup (about 1 3/4 ounces) graham crackers, coarsely chopped, from about 3 1/2 crackers1 cup (1 3/4 ounces) marshmallows

    Directions:

    Prepare a baking sheet by lining it with aluminum foil. Toss the coarsely chopped graham crackers and the miniature marshmallows together in a small bowl.Place the milk chocolate candy coating or chopped milk chocolate in a large microwave-safe bowl. Microwave until melted, stirring after every 30 seconds to prevent overheating. Stir until the chocolate is fluid and free of lumps. Allow the chocolate to cool slightly until it is still warm but no longer piping hot.Add about two-thirds of the graham crackers and miniature marshmallows mixture to the melted chocolate, and stir until combined.Scrape the chocolate mixture onto the prepared baking sheet, and smooth it into a thin, even layer. Sprinkle the remaining graham cracker chunks and marshmallows evenly on top, and press them gently into the chocolate to make them adhere to the surface.Refrigerate the bark until the chocolate is set, for about 30 minutes. Once the chocolate is firm, break it into small, irregular pieces to serve. Store s’mores bark in an airtight container in the refrigerator for up to a week.
